At Dirty Dan's we prefer to grill our fish, however, we sometimes bake or pan fry them.  If you have a cooking preference, let your server know and we will accommodate you. 
 
Fresh Wild Halibut is a wonderful fish to cook. It has little oil and no overpowering flavor of its own. It takes sauces wonderfully, and the only thing you have to watch out for is to not dry it out during  cooking.  In all cases, the fish is done when you can flake it with a fork.   Halibut is a great fish for grilling for many reasons.  This mild flavored, firm white fish has a kind of versatility you won't find in any other fish.
Halibut feed on almost any animal they can fit in their mouths. Animals found in their stomachs include sand lance (a small bait fish), octopus, crab, salmon, hermit crabs, lamprey, sculpin, cod, pollock, herring and flounder. Halibut can be found at depths as shallow as a few meters to hundreds of meters deep.  The largest recorded Halibut caught weighed in just under 600lbs.  Halibut spend most of their time near the bottom, however, they  will move up in the water column to feed.  In most ecosystems the halibut is near the top of the marine food chain. In the North Pacific the only common predators of halibut are the sea lion (Eumetopias jubatus), the orca whale (Orcinus orca), and the salmon shark (Lamna ditropis).
